Spanish Chicken

Yields: 2 Servings
  • Preheat oven to 220°C/gas mark 7/425ºF.
  • Put the oil in the bottom of shallow roasting tin
  • Rub the chicken in the oil
  • Add the chorizo sausages and the potatoes
  • Sprinkle the onion and the oregano over, then grate the orange zest over top.
  • Cook for 1 hour - baste occasionally.

  • 2 links cooking chorizo cut into chunks
  • 1 Tbsp olive oi
  • teapoon dried oregano
  • 4 small new potatoes - halved
  • 1 small onion roughly chopped
  • 2 small chicken breasts cut into pieces
  • grated zest of 1 orange
