Italian Baked Haddock

Time: 3 hrs
Yields: 5 Servings

  • Pre-heat your oven to gas mark 4 / 175c

  • Grease medium sized baking dish

  • Melt butter in heavy large saucepan over medium-high heat

  • Add onion, bell pepper and herbs and sauté until vegetables are tender, about 10 minutes.

  • Stir in tomatoes. Season with salt and pepper and cook until saucelike, stirring constantly, about 5 minutes.

  • Arrange fish in prepared dish. Pour sauce over. Sprinkle cheese on top

  • Bake until fish is cooked through and top is golden, about 25 minutes.

  • 50 grams of butter
  • 1 green pepper, chopped
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 2 haddock fillets (or cod etc.)
  • 200 gms grated mozarella or cheddar
